You may remember me telling you about the Blended Conference I attended in September and some of the wonderful sponsors there. One of them was Mooney Farms, the makers of Bella Sun Luci Sun Dried Tomato products. They sent me some of their products to try out and I was really excited. I was having a little get together and decided to use some of them to whip up some appetizers.
I used the julienne cut sun dried tomatoes in a recipe a few weeks ago. You can see my Sun Dried Tomato Chicken Alfredo HERE.
I had never made bruschetta before, but when you are sent some delicious sun dried tomato bruschetta, you have to give it try!
First I needed to make my baguette “chips” for the bruschetta to go on. I bought a baguette from the grocery store and sliced it. Then I placed the slices on a cookie sheet and brushed on some garlic infused olive oil and set it under the broiler for 3-5 minutes, until the edges become brown and crispy. Then I took it out and flip the slices over and did the same thing on the other side.
To make garlic infused olive oil I put one cup of olive oil in a microwave safe bowl and added 3 cloves of peeled and finely chopped garlic to the olive oil. I put it in the microwave for a minute, stirred it and microwaved it for another minute.
I used the Bella Sun Luci Sun Dried Tomato Bruschetta right out of the jar and put a big spoonful on each piece of toasted bread. I cut up some fresh mozzarella cheese into small cubes and put that on top and then chopped up some fresh basil to top it off.
With the Bella Sun Luci Sun Dried Tomato Halves, I decided to make hummus.
Now, I’ve never made hummus before, let alone sun dried tomato hummus.
But if you like hummus and sun dried tomatoes, you will love this recipe!
To serve it, I topped it with a couple garbanzo beans, sun dried tomato halves, couple shakes of paprika and a splash of olive oil. I cut up some pita bread into wedges for my guests to use to eat the hummus. This would also be really yummy with cut up veggies.
