I like to bake and I like to NO Bake! No bake is definitely easier, and when it tastes just as good as baked…..well then SCORE right ?!? This No Bake Cheesecake is delicious and creamy. For sure not like a traditional cheesecake, but creamier and a little sweeter and a whole lot easier!!! In my book that is a win!

My mom has been making this recipe ever since I can remember. She would only “no bake” it up on special occasions like Father’s Day or my Dad’s birthday (it is his favorite:) I always looked forward to the production of this scrumptious dessert! I don’t make it very often either, but it is not for the lack of my love for it, but in fact it’s scarce appearance at my house is BECAUSE of my love for it. I love it so much that I can’t help myself and will sit and eat the whole thing. Disgusting, honest and true right here! Sometime we just have to do things to save ourselves…..from ourselves!!
But, because I am SO excited to be visiting here today, I am going to share this recipe with you and HOPE that you have way more self control that I do! {Wink!}

First things first, the crust. You can buy a graham cracker crust at the grocery store, easy and yummy. Or you could make one! Either works great. Today I am going to show you how simple it is to whip one up!
Ingredients for a 9 in crust:
1 1/2 cups fine graham cracker crumbs
1/4 cup sugar
1/4 cup softened butter
You can also buy graham cracker crumbs, or you can make them! Just put graham crackers in a plastic bag and get your rolling pin and go to town! Not only will you make your own crumbs, it is also good for releasing pent up frustration!
Hee hee!

Mix the graham cracker crumbs, sugar and butter well. I use a pastry cutter to get the job done, but a fork works really well too.

Using a spoon press the mixture firmly over the bottom and sides of pie pan.

Bake it at 375 for 6 t0 8 minutes. If it starts to get too brown on the edges take it out, it is done. Make sure you let it cool completely before filling it. Easy right?!?!
Next the delicious filling, you will need the following:
1 8oz. pkg of cream cheese
1 14oz can sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla
In a medium bowl beat the cream cheese until it is light and fluffy. Add the condensed milk, blend thoroughly. Stir in the lemon juice and vanilla.

Pour it into your graham cracker crust. Cover and place in fridge to chill for a minimum of 3 hours.

Then EAT IT!! Oh baby, my mouth is watering just thinking about it!
