Crumpets

When I was growing up my granny would throw tea parties for me and my cousins.  Really it was just apple juice in these cute porcelain tea cups and we would have crumpets.  Although we really didn’t have crumpets.  We would have little sandwiches, cookies, crackers or whatever little snacks she had lying around.  But we would always pretend they were crumpets because that is what we thought you had to have with your tea.  Well last year I decided it was high time (get it? high time, high tea! Ha!) that I figure out what exactly a crumpet was.
My hubby and I were going to be visiting Seattle for a couple days and one of my friends told us about the Crumpet shop that was near Pike Place Market.  We went there for breakfast not once, but twice because we loved it so much.  Now I can’t tell you exactly what the difference between a crumpet and an english muffin are, but they are very similar.  But we learned that a crumpet is not split open to eat.  You just put on whatever you like on the top and then devour it!
You can see that I put some peach whipped butter on the top of one and then split the other.  Either way, they were delicious.  I had a little tea party for little miss and her girlfriends so I made some crumpets for the little hands that would eat them.  These crumpets are perfect for any tea party, breakfast or brunch.

The dough is easy to whip up and they are easy to bake up.  I used an electric griddle to cook my crumpets.  I know you can buy crumpet rings, but I just used my biscuit cutter rings because they were metal and round.  You could probably use canning jar rings too, but I didn’t try that.
Spray your rings with non stick spray and add your dough.  Let them cook for about ten minutes until the bubbles start forming, then remove the rings and flip them over to cook on the other side for about 5 minutes.
They are super yummy when they are hot, but they can be reheated in a toaster.
I enjoy my crumpets with jam, butter and even cream cheese.  But you could top them with ham and eggs too.
Don’t let the word crumpet scare you.  These really were easy to make and fun too!

Now I’m not going to lie.  I’ve been watching the first 3 seasons Downton Abbey this last week to get ready for the season premiere this sunday.  I think these crumpets would be perfect to make for a late night snack while I watch.  I might just have to make them for my mom and dad who are now fans too!
