Frozen Raspberry Lime Bellini Mocktail

It’s no secret around here that I love easy party punch recipes.  Along with party punch recipes, I love making mocktails.  I think a fun, beautiful, delicious drink can add so much to a get together.  Even if it’s unplanned, it’s always fun to whip up something good to drink.  At my house, mocktails can be made individual or in one big drink dispenser.  For this frozen raspberry lime bellini mocktail recipe I thought making them individually would be more fun for brunch than making one big pitcher.

I used Torani’s original syrup line, Torani Raspberry syrup and Torani Lime syrup, for this recipe.  I like Torani syrups because they are made with simple ingredients like pure cane sugar and natural flavors.  You could also get both the Raspberry and Lime syrup in sugar free.  Torani has the largest variety of sugar free syrup flavors that are sweetened with splenda and guilt free.

This mocktail recipe is fruity, bright and bubbly and perfect for a spring gathering.  Using Torani syrups, fresh raspberries and sparkling water, this frozen raspberry lime bellini mocktail is really easy to make.  I add my frozen mixture to the bottom of my sugared rim glasses, add my sparkling water and watch the frozen mixture float to the top.  It’s great to sip or you could mix it together (that’s what my kids liked to do).  If you are wanting a sweeter mocktail, you could use lemon lime soda instead of sparkling water or club soda.  And if you want a regular, non-mocktail bellini, add your favorite sparkling wine.  There really is no wrong way to serve this bellini mocktail.

A frozen bellini mocktail recipe perfect for spring brunch

Prep Time 20 minutes

Ingredients

• 12 oz bag frozen raspberries
• 1 cup Torani Lime syrup
• 1/4 cup Torani Raspberry syrup
• 2 liters sparkling water **lemon lime soda or sparkling wine could be substituted**
• lime wedges
• fresh rapsberries
• sugar

Instructions

1. Run a lime wedge around the rim of serving glasses.
2. Dip rim of glass into sugar, set aside.
3. Blend together frozen raspberries, lime syrup and raspberry syrup, until smooth.
4. Spoon approx. 1/4 cup frozen raspberry mixture into prepared glasses.
5. Top with sparkling water.
6. Add fresh raspberry and lime wedge to serve.
