St. Patrick’s Day is fast approaching. It wasn’t until I started having kids that I really got into anything St. Patrick’s Day. These days I will actually decorate my house with green and clovers and make treats that are perfect for the holiday. This year I decided to make this easy mint brownies recipe.
Now when I say easy mint brownies recipe, that is exactly what I mean! My mom came over to my house one day and I told her what I was going to make. As I was describing it to her, she cut me off and finished what I was going to say. We were planning on making the same thing! Crazy!!
What you need to make these brownies is a boxed brownie mix and some Andes mints. Make your brownies according to the package directions. While it is in the oven, unwrap your Andes Mints. As soon as the brownies come out of the oven, lay the unwrapped Andes Mint right on top of the brownies. I used 24 for my 8×8 pan of brownies. Let them sit on the hot brownies for a couple minutes and then use the back of a spoon or spatula and spread them Mints over the top of the brownies.
I let them cool before I cut them to serve. I loved the perfect minty flavor the Andes Mints gave the brownies. These would be a fun dessert to bring to your next potluck or to give as a treat to friends and neighbors. Or heck, just eat them yourself! 🙂
I’m not a huge brownie lover, but I may have eaten more than my fair share of these mint brownies!
