I know it may seem that I just can’t get away from the flavored popcorn, and you’re right. I can’t! You know why? Because it is soooooo easy and sooooo yummy! I have found that most people I make this for absolutely love it and because I can make it in 15 minutes, I find that this is my go to neighbor/friend/teacher treat. This time I whipped up some Pumpkin Spice Caramel Popcorn. It may just be the best yet!
It all came together with the help of these. Pumpkin Spice melting candies from Wilton. I spied these in the halloween isle at Walmart the other day and knew right away I had to make some popcorn. The pumpkin spice flavor would be super yummy with a little bit of caramel. So I picked up some caramel bits in the baking isle. I’ve used the caramel bits in my turtle cookie recipe too.
To put this all together you need to:
Pop one bag of microwave popcorn and put it in a big bowl.
Pour your melting candies (entire bag) into a glass microwavable bowl and cook for 1 minute. Mix it a little to get it to start melting and put it back in the microwave for 30 second intervals, mixing between each interval, until it is all melted together and smooth.
Pour over popcorn and mix together gently.
Add a big handful or two of the caramel bits and mix those in.
Transfer everything onto a parchment lined cookie sheet and spread out.
Once the candy has hardened back up, break it into pieces and fill up your bags.
The hardest and longest part is waiting for the candy to set up.
At least that is the hardest part for my kids! 🙂
Those caramel bits (as you can see in the pic above) are just the perfect amount of soft caramely goodness to go with the pumpkin spice flavored popcorn. It really is a delicious combo!
I also made up some cute tags to attach to the bags to give away.
