Since it’s not yet Thanksgiving I figure I can still post a pumpkin recipe. I love yummy sweet breads and this one fits right into that category. This time however, I decided to make Pumpkin Muffins instead of Pumpkin Bread. The recipe is the same, the cooking time is the only thing that changes.
This recipe is really easy to whip up and would be a great start (or end) to your Thanksgiving Day! I even added chocolate chips and pecans to my bread. Because I just love that combo! Of course, you don’t have to add those and the muffins would be just as tasty. I was able to get 24 muffins and a small loaf pan out of this recipe. These muffins were moist and delicious.
Now the cream cheese drizzle I added at the last minute, which you can too. But these muffins are super good without it. If you want to make the cream cheese drizzle, this is what you do.
Cream together 4 oz cream cheese with 1 cups powdered sugar.
Add 1/2 tsp vanilla.
Once everything is creamed together add water.
Start with 3 TBLs and add then add a little at a time until
you get the consistency you like.
Drizzle onto your muffins.
