Have you started any fall baking? I know I’ve been busy whipping up some yummy recipes and I could not wait to share this one with you! These pumpkin sandwich cookies are SO easy and I mean SO easy. They are the perfect treat to kick start your fall baking this year.
Ok so you might remember that I am a HUGE fan of Target. I mean most people are, and if you’re not, that’s ok. Just run in and check out their Halloween aisles. It might just make you change your mind. 😉 I always spend way too long when I shop there, especially at the holidays, because I go up and down these aisles to check out all the cool Halloween stuff they have. I especially love the baking sections.
There are always yummy treat mixes and fun decorations. I stopped at this Pillsbury® baking goods section and knew I needed to make a fall treat. I picked up a box of the Perfectly Pumpkin Cookie Mix and a can of the Cream Cheese Frosting. We were heading out of town and I wanted to make a quick treat for our friends.
I also spotted these DOVE® milk and dark chocolates on one of the end caps. These are exclusively available at Target.
The thought of pumpkin and chocolate together just made sense. Plus I thought they were super perfect for Halloween. So I bought both the DOVE Milk Chocolate Eyeballs and Dark Chocolate Pumpkins.
I mixed up the Pillsbury Perfectly Pumpkin Cookie Mix just as the box instructed, but instead of doing big cookies, I thought bite size cookies would be even better! I love bite size treats. Plus I don’t feel guilty when I eat more than one. 🙂 So I used a melon baller as my scoop to make my bite sized pumpkin cookies. (This made 60 mini cookies)
I baked them just as the package instructed but not too long. I didn’t want them to get too brown on the bottoms.
While the cookies were baking, I unwrapped some of the DOVE Milk Chocolate Eyeballs and chopped them up into small pieces. Leave them on your cutting board until you are ready to use them.
Once the cookies were cooled, I opened the Pillsbury Cream Cheese frosting and added a nice spoonful onto the bottom of the cookie.
I topped the frosting with another cookie and then rolled the edges, where the frosting was coming through, into the chocolate pieces so the frosting was coated in chocolate.
And that’s it!! I kept them in a tupperware in the fridge and took them out about 10 minutes before I gave them to our friends.
Pumpkin Sandwich Cookies
Bite sized pumpkin, cream cheese and chocolate deliciousness perfect for fall.
Ingredients
- 1 box Pillsbury Perfectly Pumpkin Cookie Mix
- (plus the ingredients to make the cookies: butter, egg)
- 1 can Pillsbury Cream Cheese Frosting
- 1 bag DOVE Milk Chocolate Eyeballs/Dark Chocolate Pumpkins
Instructions
- Mix cookies according to package directions.
- Scoop mini cookies onto a baking sheet.
- Bake 375 degrees for 7-8 mins.
- Unwrap and chop chocolate pieces.
- Add a spoonful of frosting to the bottom of cooled cookie and place a second cookie on top.
- Roll in the chopped chocolate pieces to coat frosting.
- **If you don't want to make sandwich cookies, spread frosting on top of cookie and sprinkle chopped chocolate on top - approx. yield 60 (non-sandwich) cookies
Both of my friends that I shared these cookies with, asked me for the recipe. I laughed and said, Ok! They couldn’t believe they came from a boxed cookie mix and canned frosting. Because I didn’t have to make these pumpkin sandwich cookies entirely from scratch, these cookies were done in no time. And they were really good too!

These look amazing – and that you got 60 cookies out of a cookie mix! I, apparently, need me a melon baller, as I’ve never gotten the correct amount of cookies out of a recipe! 😀
