Today I’ve got a really easy recipe that I made for my hubby’s birthday.
I don’t know why I haven’t made this before, because it was a hit!
Green Chili & Cheese Chicken Enchiladas
For this recipe I was able to use my bottled chicken that I had bottled for my food storage, but you could use shredded rotisserie chicken or cook up 2 or 3 chicken breasts to use.
Here you can kind of see the steps I went through to get these babies all ready for the oven.
I did soften the corn tortillas in some hot oil to make them easier to roll, so when you read that part of the recipe, don’t let it deter you from making this. It was actually really easy.
Cheesy and delicious. Perfect amount of chicken and chili flavors.

Served up with a side of sour cream and salsa,
it was a perfect dinner for the birthday boy.
