Red Velvet Cupcakes with Cream Cheese Frosting

A few weeks ago my sister in law was going to be celebrating a birthday.  I was trying to figure out what to get her for her birthday and found a few little things here and there.  We were going to be getting together for sunday dinner to celebrate and so I decided I would make her anything she wanted for dessert as one of her gifts.
She decided she wanted me to make cupcakes with the yummy frosting.  Knowing her favorite cupcakes of all time are the red velvet cupcakes from Sprinkles.  I’ve never made red velvet anything before, so I decided I would give red velvet a try.
Of course Sprinkles cupcakes are in a league all their own, but I must say, these red velvet cupcakes sure turned out delicious!  The birthday girl was a fan, which was the most important part of making these cupcakes.

These cupcakes were moist and light.  Topped with the yummy cream cheese frosting, they were the perfect dessert for the birthday girl!
Plus they looked amazing! 🙂
If you are a fan of red velvet, this recipe is a good one to have on hand.  It’s not too difficult.  The only thing that freaked me out was using a whole (1 oz)  bottle of red food coloring (which I found at Walmart).  But it is just what the recipe needs to get the perfect red color to qualify them as
RED VELVET!

    Your frosting looks perfect! I wish I could make frosting look this amazing. At 9 1/2 months pregnant, I’ve been having some major cravings for red velvet cake. These look delicious!
