Change up your traditional sweet potato side dish with this roasted butter pecan sweet potato recipe. These roasted butter pecan sweet potatoes will be a perfect side dish for your Thanksgiving dinner.
Do you love sweet potatoes? I wasn’t a fan when I was younger, but one Thanksgiving, I was brave enough to give that sweet potato casserole a try. And I have not refused a sweet potato since! 🙂
Even though sweet is actually in the name of it, I was surprised at how sweet the dish was. Now I love all things sweet potato. And I love that you can use them in so many ways.
For Thanksgiving I thought I’d try to take the classic ingredients in a sweet potato casserole, and create these butter pecan sweet potatoes. Now I’m not a lover of marshmallows, so I didn’t use those, but these roasted sweet potatoes are so delicious! And I think the roasting brings out the best of the flavor.
Butter Pecan Sweet Potatoes
- 4 large sweet potatoes - peeled and cubed
- 2 TBL olive oil
- 1/2 tsp salt
- 3 TBL brown sugar
- 2 TBL butter - room temp.
- 1/4 cup chopped pecans
Preheat oven to 400 degrees.
Coat peeled and cubed sweet potatoes with olive oil and salt. (a gallon ziploc works great)
Spread evenly onto a cookie sheet or jelly roll pan.
Bake for 15 minutes.
Turn sweet potatoes as best you can on the pan with a spatula.
Bake 10 minutes.
In a small bowl combine brown sugar, butter and pecans.
Sprinkle over sweet potatoes.
Bake for another 10 minutes.
Remove from oven and place in serving bowl.
Gently stir sweet potatoes to coat evenly.
