June is going to be an exciting month!
While I am awaiting the arrival of baby #3 (any day now), trying to rest, take it easy and then spend time with our new precious bundle, I’ve asked some of my blogging friends to share some fun recipes, crafts, and printables with you.
Today we are kicking it off with Vanessa from See Vanessa Craft. She has a great recipe to share with us for this Tasty Tuesday.
Vanessa is another AZ blogger and she and I have had the privilege to meet on a couple of occasions and she is so much fun and super sweet. She is super creative and is always working on a couple projects at a time. With a toddler at home and one on the way, I don’t know how she does it all!
Hi Lizzie Jane Baby readers! I’m Vanessa and blog about crafty stuff over at See Vanessa Craft. I’m super excited to be here and even more excited for Liz and her new bundle of joy! I might have a small obsession with funfetti cake batter and creating unique recipes out of it. It’s just so happy and fun, how could you not love it?! Have you guys tried making cookies out of cake batter before? You’ll learn how to do it with this easy recipe! Go a step further and sandwich some icing in between 2 cake batter cookies for a fun whoopie pie! These funfetti cookie sandwiches are perfect for parties or a special treat. Funfetti Cookie Sandwiches (makes 16 sandwiches)
Ingredients
18.25 oz Funfetti Cake Mix
1/3 cup Oil
2 Eggs
12oz Vanilla Frosting
Rainbow Sprinkles
Directions
Step 1: Preheat oven to 350 degrees.
Step 2: In a large bowl, mix together the cake mix, oil and eggs until smooth.
Step 3: Drop 1 tbsp of dough at a time onto a non-stick cookie sheet.
Step 4: Flour the bottom of a glass and flatten cookie dough or use your hands to flatten.
Step 5: Bake at 350 degrees for 5-7 minutes, until the bottom is light brown. Allow to cool.
Step 6: Frost the bottom of half the cookies. Place the remaining cookies on top of the frosted cookies to make a sandwich. Roll the edges in rainbow sprinkles. Enjoy!
