One of my favorite things about the beginning of the holiday season is all the peppermint goodness. I absolutely LOVE peppermint! I love peppermint ice cream and the fact that it’s not too cold here to eat it. I love the peppermint bark I get in my stocking every year. And now I love this White Chocolate Peppermint Poke Cake!
This cake is super easy to put together. And look how festive!
Here is what you will need to make this minty dessert. (or breakfast! just sayin… it may have happened!)
1 box white cake mix – baked per instructions
1 small box instant white chocolate pudding mix – mixed per instructions
1 (8) oz container cool whip
1/4 tsp peppermint extract
Peppermint crunch pieces for top
Here is how you assemble it.
Bake your cake in a 9×13 size pan and let cool. Using the end of a wooden spoon (or any utensil that will make a good size hole) poke your cake. You can do as little or as many holes as you like. Then mix your pudding and pour on top of your cooled cake and help spread it so it covers the entire top and goes down into the holes. Let it set up in fridge for about 30 minutes. Add 1/4 tsp peppermint extract to thawed cool whip and stir together. Spread cool whip on top of cake and top with peppermint cruch pieces. Let it chill in fridge until ready to serve.
So simple! This is a perfect dessert for your next family holiday party or to share with neighbors!
