Tasty Tuesday – Stir Fry

Today for TASTY TUESDAY we are making one of those “clean out the fridge” meals.

I had to make a big batch of rice for a family dinner on sunday. So I got my biggest pot and filled it as full as possible. It seemed that the rice just kept on growing and growing! Needless to say, I had a LOT left over.
I also found some bottles of teriyaki sauce, stir fry sauce and some Worcestershire sauce. So I decided we could make up a delicious stir fry.

I dug around and found some zucchini, squash, green bell pepper, onion and carrots. I chopped up all my veggies so they would be ready to go into the pan when I was ready. You could really use any veggie you like. Broccoli is good, any color of pepper is good too.
After I cut up all the vegetables, I diced up some chicken breasts and added them to a hot pan that had a little oil in it. I added some salt and pepper to the chicken and I cooked it until the outsides of the pieces looked cooked.
I added first the carrots and the onions and let them cook until the onions became clear. Then I added the bell pepper and a little more salt and pepper. I let all of it cook together for a few minutes until I added the zucchini and squash (they cook the fastest so I added them last). After a few minutes, I added half a bottle of stir fry sauce, the rest of my teriyaki and a couple dashes of worcestershire sauce. I brought it up to a boil, covered it, and turned down the heat. I cooked it for only about 5 minutes until the squash looked like it was cooked. Gave it another good stir and turned off the heat.
I got out the left over rice and covered it with a good helping of stir fry (making sure to get enough of the sauce on the rice). It was fast and delicious!
