Do you make a big dinner on sundays for your family? Since I’ve been married, I have been really lucky to still enjoy sunday dinners with either my family or my husbands family. I would say that I’ve probably made sunday dinner at my home less than 10 times in the last 7 years. It is a lot of work! But I love that our family still gets together. After dinner we usually all want something for dessert. One more think to prepare, cook and clean up. Well this is a super quick dessert that takes no time to put together. Try making this easy strawberry shortcake for your next family dinner.
The reason it’s so easy is because it uses a store bought angel food cake. You could also use a store bought pound cake. But I prefer angel food.
The reason it is so good is the real whipped cream and the way the strawberries are prepared. With strawberry season upon us, this strawberry shortcake wouldn’t be too expensive to make for a BBQ or party even.
Here is how I prepared my strawberries: first I cleaned the berries and trimmed the tops off. Cut them in quarters and put them in a big bowl. Then sprinkle 1 TBL sugar for every cup of sliced strawberries. (ex. if you had 4 cups of sliced berries, use 4 TBL sugar). It doesn’t have to be exact, and you could always add more! 😉 Mix the strawberries and sugar together until the sugar is all mixed in and let the strawberries sit on the counter covered while you whip your cream. Then mix your pint of heavy whipping cream with a hand mixer on high, with 1 tsp. of vanilla and 1/4 – 1/2 of powdered sugar (depending on how sweet you like it, start with a less and you can always add more) until peaks start forming.
Slice your cake, add your berries and top with a generous dollop of fresh whipped cream.
While the strawberries sit on the counter, they create a delicious juice with the sugar. I love to add a little of that juice to each piece of cake. Yum!
