It’s Tuesday!
And if you’ve been following Lizzie Jane Baby, you know Tuesday means a new recipe!
This recipe is one of my hubby’s favorites. I have been making this for the last {almost} 6 years that we’ve been married.
When we were first married, I watched a lot of the Food Network and mostly Rachel Ray. I loved her 30 minute meals and how she made it look so easy. Especially because with a full time job, she made dinner look possible. Meatloaf “muffins” was one of the things that I first tried from her show.
Although I loved the concept, It took me awhile to perfect my meatloaf recipe.
So I am sharing it with all of you today.
This is the recipe that I use every time.
I don’t usually make a traditional meatloaf, but I make meatball muffins
and for valentine’s day, I make an even more special version.

Here they are before they go into the oven.
I hope you give these a try. If you like meatloaf, but not the time it takes to cook one,
this is your answer!
Happy Cooking!
